This Quotation Estimate is issued by Kyoto Artisan Culinary Services Co., Ltd. to Tanaka Hospitality Group for the engagement of a professional Baker to provide comprehensive baking and pastry services at the client's boutique hotel and restaurant premises located in the historic Higashiyama district of Japan Kyoto. The Baker will be responsible for the daily production of artisan breads, traditional Japanese confections (wagashi), European pastries, and seasonal specialty items that reflect both the rich culinary heritage of Kyoto and international baking standards. This Quotation Estimate covers a twelve-month engagement period commencing 1 September 2025 through 31 August 2026.
The engaged Baker shall perform the following duties within the Japan Kyoto premises:
- Daily preparation and baking of a minimum of twelve (12) varieties of artisan breads, including Kyoto-inspired sourdough with local yuzu zest, matcha-infused brioche, and traditional Japanese shokupan.
- Production of seasonal wagashi and Japanese confections aligned with the four seasons of Kyoto, incorporating locally sourced ingredients from the Nishiki Market and surrounding Kyoto prefecture farms.
- Creation of European-style pastries, cakes, and dessert items for the hotel's afternoon tea service and à la carte dining menu.
- Development of a rotating monthly menu in consultation with the hotel's executive chef, ensuring alignment with Kyoto's cultural calendar, including cherry blossom season, Obon festival, and autumn foliage periods.
- Supervision and training of two (2) junior kitchen staff members in fundamental baking techniques and food safety protocols specific to Japan's Ministry of Health, Labour and Welfare (MHLW) regulations.
- Maintenance of all baking equipment, including the commercial deck oven, planetary mixers, and proofing chambers, in accordance with manufacturer guidelines and Japan's food hygiene standards.
- Participation in quarterly supplier meetings at Kyoto's central wholesale markets to negotiate pricing for flour, butter, eggs, and specialty ingredients.

Payment for the services outlined in this Quotation Estimate shall be made in accordance with the following schedule:
- 30% advance payment (JPY 3,582,150) due within fourteen (14) business days of acceptance of this Quotation Estimate.
- Quarterly instalments of JPY 2,089,600 payable on the 5th of January, April, July, and October 2025/2026.
- Final settlement of any remaining balance due within thirty (30) days of the contract's conclusion on 31 August 2026.
All payments shall be made via bank transfer to the account designated by Kyoto Artisan Culinary Services Co., Ltd. at MUFG Bank, Kyoto Central Branch. Late payments shall incur an interest charge of 1.5% per month as stipulated under Japanese commercial law.
- This Quotation Estimate is valid for thirty (30) calendar days from the date of issue. Beyond this period, pricing may be revised to reflect changes in ingredient costs, exchange rates, or labour market conditions in Japan Kyoto.
- The Baker engaged under this Quotation Estimate shall comply with all applicable Japanese labour laws, immigration regulations (if applicable), and local Kyoto municipal ordinances governing food preparation and commercial kitchen operations.
- All recipes, menu designs, and proprietary techniques developed by the Baker during the engagement period shall remain the intellectual property of Tanaka Hospitality Group, unless otherwise agreed in writing.
- Either party may terminate this engagement with sixty (60) days' written notice. In the event of early termination, the client shall be liable for all costs incurred up to the termination date plus a 10% administrative fee.
- The Baker shall maintain comprehensive professional liability insurance with a minimum coverage of JPY 50,000,000, valid throughout the engagement period in Japan Kyoto.
- All work shall be performed in accordance with the highest standards of food hygiene as mandated by the Japan Food Sanitation Act and Kyoto Prefecture's local health bureau requirements.
- Disputes arising from this Quotation Estimate shall be resolved through mediation in Kyoto, Japan, in accordance with the rules of the Kyoto Arbitration Centre.
By signing below, both parties acknowledge and agree to the terms, conditions, and pricing set forth in this Quotation Estimate for the Baker services to be rendered in Japan Kyoto. This document constitutes a binding commercial agreement upon execution by both authorized representatives.
