Initially assigned to the Garde Manger (Cold Kitchen) section, my duties expanded significantly as I demonstrated proficiency in knife skills and station organization. My primary responsibilities included: A. Preparation of Ingredients: I was responsible for washing, peeling, chopping, and portioning vegetables and meats according to standard recipe cards. In the context of Sri Lankan cuisine this required meticulous preparation of spices such as cinnamon sticks, cardamom pods cloves star anise which form the backbone of local curries in Colombo restaurants. B. Assisting in Curry Preparation:C. Station Maintenance: During this tenure, I significantly improved my technical capabilities. One of the most critical skills learned was working with the wok in high-heat conditions for stir-fry dishes often popular among tourists and locals alike in Colombo's bustling food scene. I also gained advanced knowledge of fermentation processes used in making pickles (acharu) which are staple accompaniments to rice and curry meals served throughout Sri Lanka. Furthermore, I developed a keen eye for plating presentation, ensuring that every dish leaving the kitchen met aesthetic standards expected by high-end clientele visiting Colombo. The ability to multitask during peak dinner hours was particularly challenging but ultimately rewarding as it improved my speed and efficiency as a Chef in training.
