• Menu Development and Design: The Chef will design a seasonal menu incorporating local Kenyan ingredients (such as sukuma wiki, githeri, nyama choma preparations, and fresh Lake Victoria fish) alongside international cuisine, ensuring cultural relevance for the Kenya Nairobi clientele.
• Daily Kitchen Operations: Full management of kitchen preparation, cooking, plating, and food presentation for a minimum of 8 hours per day, 6 days per week.
• Staff Supervision: The Chef will oversee and train up to four (4) kitchen assistants, ensuring consistent quality and adherence to food safety standards as mandated by the Kenya Public Health Act.
• Inventory and Procurement Management: The Chef will manage daily ingredient procurement from local markets in Kenya Nairobi (including Karura Market and Ngong Road fresh produce suppliers), ensuring cost efficiency and freshness.
